Domains Email And MS Exchange

A client of mine has recently had an exchange server installed for his business which will handle email and such. I will be taking control of his domain soon and I aren't sure how this will work in relation to forwarding email to his exchange server.

Is this something as simple as me setting an MX record to the IP of his server?

Nearly, MX records cannot point to IP addresses so create an A record (exchange.domain.com) which points to the IP address, then create the MX record which points to exchange.domain.com.
