set up another mail record in your site's DNS, mail2 perhaps, and make it a CNAME record pointing to the original mail.yourdomain.com record on your domain. Bit of a kluge, but it could well work.

Another option would be to use a different domain when specifying the second smtp server, whether you use the canonical mail server domain, eg. mail.arsenic.lon.periodicnetwork.com, or set up another mail record in your site's DNS, mail2 perhaps, and make it a CNAME record pointing to the original mail.yourdomain.com record on your domain. Bit of a kluge, but it could well work.
